Adaptation of existing homes may be one of the most important contributors to dealing with climate change in the UK. Stinging Nettles and Dead Nettles….both good for eating! I’ve had a fascination for foraging since I was little, not that I remember being very impressed by my older brother’s offering of steamed stinging nettles…they were probably mature leaves rather than young so seemed a bit strong!

No cake tin, no problem! Improvising with what’s to hand can be really fulfilling. I’m following in the footsteps of both my mother and her mother by saving butter-wrappers for lining tins (it’s quicker than faffing with baking parchment, at least for the sides!). The tins I used weren’t from baked beans but sponge puddings…4”/10cm. (They were in the cupboard…)
