Nettle Tea:
Pick just the top few young leaves from nettles (wearing gloves to avoid stings!), wash in cold water. Pour almost-boiling water on top. Brew for a couple of minutes. Ready to drink. Makes a good alternative to vegetable stock too.
Sprouted Lentil and Adzuki Bean Omelette with Goats Cheese:
Home-sprouted Lentils and Adzuki Beans (sprouted in seperate jars as they sprout at different rates) were sprinkled into an omelette made with 2 eggs whisked lightly with a little milk and seasoned. We added chunks of soft goats cheese which goes particularly well with sprouted lentils.
